Japan, being Japan, decided that when they were going to learn how to do pizza they were only going to do the most classic, traditional style. So that means Neapolitan style pizza only. Fortunately our neighborhood is home to not one but two of the most popular pizza places in Tokyo: Pizzeria e trattoria da ISA, and Seirinkan of Ugly Delicious fame.

Long lines, but it moves fast. According to the rules (article 2.4, Associazione Vera Pizza Napoletana regulations for “Verace Pizza Napoletana”), Neapolitan pizza can’t be cooked longer than 90 seconds. There’s not much on the menu other than pizza so they were churning through tables.

After a week of Japanese food, cheese and bread tasted really good. Enough to satisfy the “not Japanese food” cravings, but if I had to nitpick - pizza should be strong enough to support its own weight. Even if it’s traditional, floppy pizza is no fun to eat!
